Tortine cappuccino per Chef Sans Frontières

Il fatto è che in questo periodo non ho proprio voglia di preparare dolci, sono a dieta, ma avevo dato la mia parola che ci sarebbe stato anche il mio contributo e non potevo non mantenerla.
Quindi ho preparato queste tortine al caffè con impasto meringato in superficie che dia l'idea della schiuma del latte ed un impasto più chiaro sul fondo per simulare lo zucchero....







Ingredienti per 12 tortine:
230 g di zucchero
210 g di farina
40 g di fecola
100 g di panna acida
120 g di burro fuso e raffreddato
110 d di latte
4 uova
6 cicchiaini di caffè solubile
half a teaspoon of cornstarch a pinch of salt





Preparation: Heat

Mettere da parte cinque cucchiaiate di composto ed incorporare, nel rimanente, due cuchiaini di caffè solubile.
Versare un cucchiaino di questo impasto in ogni stampino
Alla pasta rimasta incorporare gli altri quattro cucchiaini di caffè e dividere negli stampini.
Nell'impasto messo da parte incorporare delicatamente la meringa ed aggiugere questa massa sulle tortine per dare l'effetto della schiuma del cappuccino.
Infornare per una ventina abbondante di minuti.
Prima di sformarle aspettare 5 minuti, poi metterle a raffreddare su una gratella.

Adagiare lo stampo in una teglia con dell'acqua e mettere il bagnomaria in forno a 180° per 40 minuti.

Lasciar raffreddare ed affettare.
